Ingredients

1 1/2 lbs beef bones
1 lb chuck steak
15 cups cold water
1 1/2 teaspoons salt
8 peppercorns
2 cups diced peeled beets
2 cups cubed potatoes
1 cup chopped carrot
1 cup chopped onion
1/2 cup sliced celery
3 cups shredded cabbage
1 garlic clove , crushed
1 1/2 cups chopped canned tomatoes
2 tablespoons lemon juice
salt & freshly ground black pepper
1/4 cup or 1/4 cup frozen dill sprigs
1 cup sour cream
Better-next-day borscht is perfect for those busy weeknights or meal-prep. Just cook it the day before and reheat it when required. This soup is not only easy to prepare, but it is also extremely healthy and nutrient-dense. Slow-simmered beef and bones provide depth of flavor, while beets add a natural sweetness to the soup. Instructions

1.Preheat your oven to 400 degrees F.
2.In a roasting pan, place beef bones and chuck steak.
3.Roast in the preheated oven until browned, approximately 30 minutes.
4.Add 8 cups of cold water, 1 1/2 teaspoons salt, and 8 peppercorns to the roasting pan. Scrape the bottom of the roasting pan to loosen any browned bits.
5.Transfer the beef and bones to a large pot. Add 7 cups of water and bring to a boil. Skim off any foam that appears. Reduce the heat and simmer until the beef is tender, approximately 1 1/2 hours.
6.Remove the beef from the pot, and when cool, cut it into small pieces. Discard the bones.
7.Add the beets, potatoes, carrot, onion, celery, shredded cabbage, garlic, and canned tomatoes to the pot. Bring to a boil and then reduce the heat to a simmer.
8.Add the cooked beef pieces, lemon juice, and 1/4 cup of fresh or frozen dill sprigs. Simmer until the vegetables are tender, approximately 50 minutes.
9.Season with salt and freshly ground black pepper, if needed.
10.Serve with a dollop of sour cream on top.
