Ingredients

1 1/2 lbs stewing beef , cut into 1 1/2 inch cubes
1 tablespoon herbes de provence
1 teaspoon paprika
3 teaspoons salt ( divided )
1 teaspoon fresh ground black pepper
2 tablespoons olive oil
2 tablespoons butter
1 onion , chopped
2 garlic cloves , pushed through a press
1 bay leaf
2 cups red wine ( Merlot or Cabernet Sauvignon )
2 cups water
1 beef bouillon cube
1 can beef broth
1/2 lb green beans , cut into 1 inch pieces
2 medium zucchini , cut into chunks
1 package sliced mushrooms
2 turnips , peeled & cut into 1/2 to 3/4 pieces
3 celery ribs , cut into chunks
1 green bell pepper , seeded and cut into chunks
1 -2 carrot , peeled & cut into round chunks , then cut chunks in half

Instructions

1.In a large bowl, mix together the herbes de provence, paprika, 2 teaspoons of salt and pepper.
2.Add the beef cubes and toss to coat.
3.In a large pot, heat the olive oil and butter over medium heat.
4.Add the chopped onion and garlic and cook until they are soft.
5.Add the beef and bay leaf to the pot and cook until the beef is browned on all sides.
6.Add the red wine, water, beef bouillon cube, and beef broth to the pot and bring to a boil.
7.Reduce the heat and let the stew simmer for 1 hour.
8.Add the green beans, zucchini, mushrooms, turnips, celery, and green pepper to the pot and continue to simmer for an additional hour.
9.Finally, add the carrots and cook for another 15 minutes.
