Ingredients

3/4 cup almond halve , plus
2 tablespoons peeled almond halves
120 almond halves , reserved for decoration
3/4 cup prepared marzipan , plus
2 tablespoons prepared marzipan ( a prepared almond paste usually packaged in logs , available in specialty food stores )
1 tablespoon rose water
7 tablespoons powdered sugar
2 small eggs
3 1/2 tablespoons flour
Bethmaennchen are a traditional German Christmas cookie that is made with ground almonds and marzipan. These cookies are often shaped into little almond-shaped balls and topped with half an almond to resemble little snow-tipped mountains. Instructions

1.Preheat the oven to 325°F (160°C).
2.Line a baking sheet with parchment paper.
3.Finely grind 3/4 cup almonds in a food processor.
4.Add in 3/4 cup marzipan, rose water, powdered sugar, and eggs.
5.Process until the mixture is smooth and well combined.
6.Add in the flour and remaining 2 tablespoons of almonds and process until fully combined.
7.Shape the dough into small balls, about 1 tablespoon each.
8.Press an almond half into the top of each ball.
9.Place the cookies on the prepared baking sheet.
10.Bake for 12-15 minutes or until lightly golden brown.
