Ingredients

2 bags spinach
1 sweet onion
3 tablespoons dill weed
1/2 tablespoon parsley
1/4 teaspoon oregano
1 1/2 - 2 cups feta cheese
1 package phyllo pastry sheets ( whatever size you want , really )
1/2 cup olive oil ( you do n't have to use it all )
1/2 tablespoon parsley
1 tablespoon parmesan cheese

Instructions

1.Preheat the oven to 375°F (190°C).

4.Lay out phyllo sheets one by one on the baking dish; brush each phyllo with olive oil before placing the next layer.
5.Once you have used half the phyllo, spread the spinach and feta cheese mixture over the top. Cover with the rest of the phyllo layers, brushing each with olive oil.
6.Sprinkle some parsley and parmesan cheese over the top.
7.Bake for 35-40 minutes or until golden brown. Let cool for a few minutes before serving.
