Ingredients

5 1/2 kg turkey
2 -4 clementines
rosemary , bay or fresh thyme sprig
150 g butter
2 -3 carrots
3 onions , peeled
2 celery ribs

Instructions

1.Preheat the oven to 180°C/350°F/gas 4.
2.Wash the turkey inside and out and pat dry with kitchen paper.
3.Season the turkey generously with sea salt and black pepper, then stuff the cavity with the clementines, a handful of rosemary, bay or fresh thyme, and the butter.
4.Roughly chop the carrots, onions and celery and place in a large roasting tray.
5.Place the turkey on top and roast for 3 to 3 and a half hours, or until the juices run clear.
6.When the turkey is cooked, remove it from the oven and let it rest for at least 30 minutes before carving.
7.Carve and serve with your favorite sides.
