Ingredients

1 cup cottage cheese
1 cup butter , softened
2 cups all-purpose flour
1/4 cup butter , softened
3/4 cup brown sugar
1/4 teaspoon ground cinnamon
3/4 cup chopped pecans
1/2 cup raisins ( optional )
3 tablespoons orange marmalade ( optional )
1 egg white
2 tablespoons water

Instructions

1.In a large bowl, mix cottage cheese and softened butter together until smooth. Add the flour and mix until just combined. Split the dough into 4 equal parts and form them into discs. Cover each disc with plastic wrap and refrigerate for at least 2 hours.
2.Preheat the oven to 350°F. Line a baking sheet or two with parchment paper.
3.In a small bowl, mix the softened butter, brown sugar, cinnamon, chopped pecans, and raisins (if using).
4.Lightly flour a board and roll out one of the discs into a circle. Spread a thin layer of orange marmalade (if using) over the surface of the circle. Spread 1/4 of the butter mixture over the surface of the dough. Cut the circle into 12 equal wedges. Roll each wedge from the widest edge to the point, forming the shape of a crescent. Beat egg white with water and brush the top of each roll.
5.Place each crescent on the lined baking sheet, leaving space between them. Bake for 20-25 minutes until golden brown.
6.Let cool for a few minutes before removing from the baking sheet with a spatula. Repeat with the remaining dough rounds.
