Ingredients

2 -3 lbs pinto beans
2 small white onions
2 fresh jalapenos ( optional )
6 garlic cloves , minced
4 small roma tomatoes
1/4 cup fresh cilantro , chopped
3 smoked ham hocks
1 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons paprika
1 tablespoon black pepper
1 1/2 tablespoons kosher salt
1 tablespoon cumin
2 table spoons bacon drippings
32 ounces chicken stock
12 ounces dark beer ( optional )
Borracho Beans are a traditional Mexican dish made with pinto beans, ham hocks, and a variety of spices. Instructions

1.Rinse the beans and place them in a large pot. Add enough water to cover the beans by 2 inches.
2.Bring the water to a boil, then reduce the heat to a low simmer. Cover and let beans cook until just tender, about 45 minutes.
3.While the beans are cooking, chop the onions, jalapenos, garlic, and tomatoes.
4.In a large skillet, sauté the onions and jalapenos over medium heat until onions are translucent.
5.Add the garlic and sauté for another minute until fragrant.
6.Add the tomatoes and cilantro and sauté for 2 minutes.
7.Add in the ham hocks, chili powder, garlic powder, onion powder, paprika, black pepper, kosher salt, cumin, and bacon drippings. Stir together and cook for 5 minutes.
8.Add the chicken stock and beer, stir, and reduce heat to low. Simmer for another 30 minutes.
9.Add the cooked beans to the skillet with the other ingredients and stir together gently. Simmer for another 30 minutes, stirring occasionally.
