Ingredients

1 whole chicken , cooked and shredded
1 lb finely shredded monterey jack and cheddar cheese blend
2 tablespoons hot sauce
1 teaspoon salt
1 teaspoon cumin
16 ounces green chili sauce
corn tortilla ( or any kind )
These Chicken Enchiladas Verde are a classic Mexican comfort food that are perfect for a comforting dinner. The dish is made with shredded chicken coated in hot sauce and green chili sauce, then wrapped in tortillas and covered with shredded cheese. The resulting enchiladas are cheesy, spicy, and oh-so-satisfying.

Instructions

1.Preheat the oven to 350°F (175°C).
2.In a bowl, combine the shredded chicken with the hot sauce, salt, and cumin.
3.Add a small amount of the green chili sauce to a baking dish.
4.Warm up the corn tortillas by frying them in oil or heating them in a microwave for 15 seconds.
5.Place a spoonful of the chicken mixture in the center of each tortilla along with a sprinkle of shredded cheese.
6.Roll up the tortillas and place them seam-side down in the baking dish.
7.Pour the remaining green chili sauce over the top of the enchiladas, making sure they are completely covered.
8.Sprinkle the remaining shredded cheese on top of the sauce.
9.Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
10.Serve hot with your favorite toppings, such as diced tomatoes, chopped cilantro, and sliced avocado.
