1 cup butter , softened ( no substitutes ) | |
2/3 cup sugar | |
1/2 teaspoon almond extract | |
2 cups flour | |
1/3 - 1/2 cup seedless raspberry jam | |
1 cup confectioners ' sugar | |
2 -3 teaspoons water | |
1/2 teaspoon almond extract |
1. | Preheat oven to 350°F. |
2. | In a large bowl, cream butter and sugar until light and fluffy. |
3. | Beat in the almond extract. |
4. | Gradually add flour, mixing well after each addition. |
5. | Shape the dough into 1-inch balls and place 2 inches apart on ungreased baking sheets. |
6. | Make an indentation in the center of each cookie and spoon the raspberry jam into the indentation. |
7. | Bake for 14-18 minutes or until the edges are lightly browned. |
8. | Cool on a wire rack. |
9. | Mix confectioners' sugar, water, and almond extract to make a glaze. |
10. | Drizzle over cooled cookies. Enjoy! |
