Ingredients

1 lb medium grain rice
4 cups water
2 tablespoons light soy sauce
3 teaspoons sesame oil
6 dried Chinese mushrooms , soaked in hot water for 30 min , reserve 1 1/2 cup of the soaking water
1 tablespoon dark soy sauce
2 teaspoons sugar
2 boneless skinless chicken breasts , diced finely
8 ounces pork , minced
1 clove garlic , crushed
1/2 teaspoon fresh grated ginger
1 teaspoon salt
1 1/2 cups water ( saved from soaking the dry mushrooms )
2 teaspoons cornstarch
lotus leaves or aluminum foil
string ( for tying the bundles )

Instructions

1.Rinse the rice and soak in 4 cups of water for 2 hours.
2.In a small bowl, add light soy sauce and 2 teaspoons sesame oil. Stir to combine.
3.In another small bowl, add dark soy sauce and sugar. Mix well and set aside.
4.In a pan, heat 1 teaspoon of sesame oil and add chicken, pork, garlic, ginger, and salt. Cook for 2 minutes on high heat.
5.Add the reserved soaking liquid, cover the pan, and simmer until liquid evaporates completely.
6.In a medium bowl, add the cooked chicken mixture, soaked mushrooms (stemmed and thinly sliced), and the dark soy sauce mixture. Mix well.
7.Divide the cooked rice into 18 portions and flatten each into a small disk on a lotus leaf or a piece of aluminum foil.
8.Add a tablespoon of the chicken-mushroom mixture on top of each rice disk and fold it into a bundle. Tie with a string.
9.In a steamer basket, place the rice bundles and steam for 25-30 minutes.
10.Serve hot and enjoy!
