Ingredients

1/2 lb lean pork , shredded
1 tablespoon soy sauce
9 tablespoons oil
6 eggs , beaten
4 mushrooms , chopped
2 2 shallots or 2 green onions , shredded
1/2 teaspoon sugar
Moo Shoo Pork is a popular Chinese stir-fry dish that is commonly served with Mandarin pancakes, hoisin sauce, and julienned vegetables. Its original recipe used pork belly but has evolved to using leaner cuts of pork today. Instructions

1.In a bowl, mix shredded pork with soy sauce and set aside for 10 minutes.
2.In a heated wok or skillet, add 2 tablespoons of oil and stir-fry the beaten eggs until they are fully cooked. Remove from the wok and set aside.
3.In the same wok, add 3 more tablespoons of oil and stir in the shredded pork, cooking until it is browned and cooked through. Set aside.
4.Add the remaining 4 tablespoons of oil to the wok and stir-fry the chopped mushrooms, shallots or onions, and sugar for 2 minutes. Mix in the cooked eggs and pork, tossing all ingredients together until combined. Serve hot.
