Ingredients

1 tablespoon canola oil
500 g minced beef or 500 g minced chicken
1 packet taco seasoning mix
1/2 cup low-fat sour cream
2 cups shredded low-fat cheddar cheese
1 teaspoon table salt
1 pinch ground black pepper
8 -10 flour tortillas
3/4 cup ketchup
1/2 cup pizza sauce
2 cups reduced-fat mozzarella cheese
If you love Mexican food and cheesy pizzas, this recipe is the perfect fusion of both worlds. Ben's Really Cheesy Pizza Beef Enchiladas are a hearty and savory dish that combines seasoned minced beef, low-fat sour cream, shredded cheddar cheese, ketchup, pizza sauce and mozzarella cheese. Wrapped in a soft flour tortilla, and baked to perfection, this dish is sure to satisfy your cravings. Serve hot and enjoy with a side of guacamole or salsa for a complete meal.

Instructions

1.Preheat the oven to 350°F (175°C).
2.In a large skillet over medium heat, add the canola oil, minced beef and taco seasoning mix. Cook until the beef is fully browned and cooked thoroughly.
3.Remove the skillet from the heat and stir in the sour cream, 1 cup of shredded cheddar cheese, salt, black pepper and combine well. Reserve 1/2 cup of this mixture to the side.
4.On a clean work surface, lay out flour tortillas and fill each tortilla with about 1/3 cup of the beef mixture, roll tightly and place inside a baking dish.
5.In a small mixing bowl, combine ketchup and pizza sauce and stir well. Pour the sauce mixture over the tortillas in the baking dish, spread evenly.
6.Using the reserved beef mixture, spread about 1 tablespoon over each tortilla. Top with remaining shredded cheddar cheese and mozzarella cheese.
7.Bake in the preheated oven until cheese is melted and bubbly, about 20-25 minutes.
8.Serve hot and enjoy!
