3/4 lb plum tomato , seeded , chopped
6 large garlic cloves , finely chopped
1/4 cup fresh cilantro , chopped

Instructions

1.Preheat oven to broil, position rack about 4 inches below the heat source.
2.Cut the bell peppers in half lengthwise; discard seeds and membranes.
3.Place bell pepper halves skin side up onto a baking sheet and broil until the skins are blackened and blistered, 8 to 10 minutes.
4.Transfer the blackened pepper halves to a bowl and cover with plastic wrap to cool.
5.Once cooled, remove and dispose of the blackened skin, then coarsely chop the pepper flesh.
6.In a frying pan, heat 2 tablespoons of olive oil over medium-high heat and add the chopped plum tomatoes.
7.Cook the tomatoes, stirring occasionally, until they soften and release their juices, about 10 minutes.
8.In another frying pan, heat 4 tablespoons of olive oil over medium-high heat and add the chopped garlic.
9.Cook the garlic until aromatic, about 30 seconds, then add the pepper flesh and the cooked tomatoes.
10.Stir well and continue to cook until the mixture is very thick and the juices have evaporated, about 15 minutes.
11.Stir in fresh cilantro and red wine vinegar. Season the relish with salt and black pepper to taste.
