Ingredients

1/2 cup tapioca flour
1/2 cup sorghum flour ( corn based )
1/2 cup millet flour
1/4 cup brown rice flour
1/2 teaspoon xanthan gum
1/2 teaspoon salt
2 teaspoons baking powder ( also contains corn )
1 tablespoon brown sugar
3 egg yolks ( I use egg replacer )
3 tablespoons olive oil or 3 tablespoons coconut oil
1 1/2 cups rice milk
3 egg whites , beaten until stiff peaks form ( I use egg replacer )
real maple syrup , for serving

Instructions

1.In a large mixing bowl, combine the tapioca flour, sorghum flour, millet flour, brown rice flour, xanthan gum, salt, baking powder, and brown sugar.
2.In a separate bowl, beat the egg yolks or egg replacer, olive oil or coconut oil, and rice milk together.
3.Combine the wet ingredients with the dry ingredients and mix well.
4.In another bowl, beat the egg whites or egg replacer until stiff peaks form.
5.Slowly fold the egg whites into the batter and mix well.
6.Preheat the waffle iron and coat it lightly with cooking spray.
7.Pour approximately 1/2 cup of batter onto the waffle iron and cook until golden brown.
8.Serve with real maple syrup.
