Ingredients

3 large squirrels , skinned and gutted
1/2 cup butter
2 onions , sliced
3 tablespoons white vinegar
1/8 teaspoon dried thyme
salt and pepper to taste
18 pitted prunes
1 1/2 teaspoons all-purpose flour
1 cup cold water
Belgian Squirrel is a classic Belgian dish that is not commonly found outside of the country. Squirrels were traditionally hunted for meat and used in rural areas where food was scarce. Instructions

1.Preheat oven to 350 degrees F.
2.Melt the butter in an ovenproof dish over medium heat. Add the onions and cook until translucent, about 5 minutes.
3.Add the squirrels to the dish and brown on all sides.
4.Pour the white vinegar over the squirrels and sprinkle with thyme, salt, and pepper.
5.Arrange the pitted prunes around the squirrels, then pour the cold water over the dish.
6.Cover the dish and bake in preheated oven for 1 1/2 to 2 hours.
7.Once cooked, take the squirrels out of the dish and keep warm. Strain the remaining liquid and stir the flour into it to make a sauce. Serve the squirrels with the sauce and prunes.
