Ingredients

4 pork chops
salt and pepper
2 tablespoons plain flour
3 tablespoons oil

1/4 pint beer
1/4 pint chicken stock
1 1/2 lbs Brussels sprouts

Instructions

1.Preheat the oven to 220 C or Gas Mark 7.

5.In the same pan, add more oil if needed and sauté the onions until softened.

8.Put the pan in the oven and roast for 15-20 minutes until the pork is cooked.
9.While the pork is roasting, trim the Brussels sprouts and cut them into quarters.
10.Boil the Brussels sprouts in a large pot of salted water for 5-7 minutes or until tender. Drain them and toss with butter.
11.Mix the cornflour with a little water to make a paste, then stir it into the saucepan with the pork and onions.
12.Bring the sauce to a boil, stirring constantly until it thickens. Check seasoning and adjust if necessary. Serve the pork chops with Brussels sprouts and sauce.
