1 lb fresh plum ( ripe , halved & stoned )
3 ounces granulated sugar
3 egg yolks
3 tablespoons flour
8 ounces milk ( boiling )
1 ounce butter
1 teaspoon vanilla extract
4 tablespoons apricot jam
1 tablespoon lemon juice

Instructions

1.Preheat your oven to 400F. Blind bake your shortcrust pastry flan case for 10 minutes. Remove from oven and let it cool.

3.In a mixing bowl, add the egg yolks, granulated sugar, and flour. Whisk until light and fluffy. Add boiling milk, butter, and vanilla extract. Whisk until it forms a smooth mixture.
