1/4 cup english walnut halves
8 small beets ( about 1/2 pound )
4 heads Belgian endive
4 -6 ounces watercress , washed
1 apple , thinly sliced
sea salt
fresh ground black pepper
1 tablespoon sherry wine vinegar
3 tablespoons extra virgin olive oil

Instructions

1.Preheat oven to 350°F.
2.In a skillet, roast the english walnuts for 5-6 minutes, until they become fragrant. Set aside.
3.Boil the beets in water until tender. Then, peel and quarter them. Set aside.
4.Cut the base of the Beligian endives, separate the leaves, and clean them. Set aside.
5.In a large bowl, mix the watercress and apple slices with salt, pepper, and sherry wine vinegar. Add the beet pieces, Beligian endive leaves, and walnuts and toss them well.
6.Drizzle extra-virgin olive oil, garnish it with more pepper, to taste, and serve.
