Ingredients

4 endives
4 slices ham ( not too thick , but not too thin )
4 tablespoons butter , divided
2 tablespoons flour
2 cups milk
2 cups grated swiss cheese
salt
pepper
1 pinch nutmeg ( optional )

Instructions

1.Preheat oven to 350°F (175°C).
2.In a pot of boiling salted water, cook endives for 15 minutes.
3.Drain the water and wrap each endive with a slice of ham.
4.In a saucepan, melt 2 tablespoons of butter, whisk in the flour and cook for about 1 minute.
5.Gradually pour in the milk, whisking constantly until the mixture thickens.
6.Stir in the swiss cheese and season with salt, pepper and nutmeg, then remove from heat.
7.In a baking dish, spread the remaining 2 tablespoons of butter.
8.Pour 1/3 of the cheese sauce into the dish and place the wrapped endives on top.
9.Pour the remaining sauce over the endives.
10.Bake for 25-30 minutes, until golden brown.
