Ingredients

1 lb hot Italian sausage link ( I prefer Johnsonville )
1 large onion , diced
1 large green pepper , seeded and diced
4 large garlic cloves , pressed ( or minced from a jar )
3 tablespoons pesto sauce , jarred ( I use Classico Traditional Basil Pesto )
1 medium eggplant , peeled and diced
2 medium zucchini , diced
8 ounces fresh mushrooms , sliced
1/2 cup dry red wine
2 cans crushed tomatoes , with juice
1 can rotel tomatoes and green chilies
3 jars spaghetti sauce ( Use your favorite , I like Classico )

Instructions

1.Cook the sausage in a large Dutch oven or soup pot over medium heat until browned, breaking it into small pieces as it cooks. Drain the fat and set the sausage aside.
2.Add the onion, green pepper, garlic, pesto sauce, eggplant, and zucchini to the pot, stirring to combine. Cook for 5-7 minutes, or until the vegetables are tender.
3.Add the sliced mushrooms, red wine, crushed tomatoes, rotel tomatoes and green chilies, and spaghetti sauce to the pot, stirring to combine.
4.Add the cooked sausage back to the pot, and bring the sauce to a simmer. Reduce the heat to low, and let the sauce simmer for 30-60 minutes, stirring occasionally.
5.Serve the sauce over your favorite pasta, and enjoy!
