4 Beetroots
2 oz Goat cheese
1/4 cup Walnuts
2 tbsp Olive oil
2 tbsp Balsamic vinegar
1 tsp Honey

Instructions

1.Preheat the oven to 375°F
2.Wash and peel the beetroots and cut them into small cubes
3.Place the cubed beetroots onto a lined baking sheet
4.Drizzle with olive oil, salt, and pepper
5.Roast in the oven for 30 minutes until tender
6.In a small bowl, whisk together the balsamic vinegar, honey, olive oil, salt, and pepper
7.Once the beetroots are finished cooking, allow them to cool
8.Toss the cooled beetroots into the vinaigrette to coat
9.Plate the beetroots on a serving dish
10.Crumble the goat cheese over the beetroots
11.Chop the walnuts and sprinkle over the salad
12.Season with salt and pepper to taste
13.Serve and enjoy!
