Ingredients

450 g whole baby beets
600 ml vegetable stock
50 g unsalted butter
1 onion , peeled , finely chopped
2 garlic cloves , crushed
250 g arborio rice
2 teaspoons fresh thyme leaves , chopped
150 ml red wine
75 g walnuts , roughly chopped
125 g soft fresh goat cheese
wild rocket , to serve ( arugula )
The Beetroot Risotto with Goats' Cheese & Walnuts is a classic Italian recipe that is perfect for any meal of the day, from dinner to lunch or even a light brunch. Instructions

1.Peel and finely grate the baby beets.
2.In a saucepan, bring the vegetable stock to a simmer and keep it hot.
3.In a separate large, shallow pan, melt the butter over medium heat and then sauté the onion and garlic for about 5 minutes until the onion is translucent.
4.Add the rice and thyme, stirring well to coat the grains with the butter and cook for 1-2 minutes until the rice becomes slightly translucent.
5.Pour in the red wine and stir until it evaporates completely.
6.Add a ladleful of simmering stock and stir until the rice has absorbed it. Continue adding the stock, stirring well and waiting until each addition has been absorbed before adding the next.
7.Continue until the rice is nearly cooked, which will take about 20 minutes. The grains should remain firm and slightly al dente.
8.Stir in the grated beetroot and continue to cook until the rice is done, adding extra stock if required.
9.Remove the pan from the heat and crumble in the goat cheese while stirring.
10.Serve with the chopped walnuts and topped with wild rocket leaves.
