Ingredients

500 g coarse salt
400 g sugar
1 cup dill , finely chopped
60 ml gin
1/2 cup beetroot pickle juice
1 kg salmon fillet , skin on & pin boned
24 slices rye bread
1 -2 tablespoon olive oil
1/2 cup Dijon mustard
1 cup cream , heavy

Instructions

1.In a large bowl, mix together the coarse salt, sugar, dill, gin, and beetroot pickle juice
2.In a separate bowl, place the salmon fillet skin side down, then pour the marinade over the top
3.Make sure the salmon is well coated with the mixture and cover the bowl with cling wrap or foil
4.Refrigerate the salmon for at least 2 hours or overnight
5.When ready to cook, preheat the oven to 180°C
6.Take the salmon out of the marinade and rinse it under cold water, then pat it dry with paper towel
7.Heat the olive oil in a large frying pan over medium-high heat, and cook the salmon skin side down for 3 minutes
8.Flip the salmon over and cook for another 2 minutes
9.Spread the Dijon mustard over the top of the salmon, then pour on the heavy cream
10.Transfer the salmon to the oven and bake for 12-15 minutes, or until cooked to your liking. Serve with rye bread on the side.
