Ingredients

1 1/2 cups peeled , chopped beets
1/4 cup finely chopped red onion
2 teaspoons margarine
1 egg
1/2 cup water
2 cups all-purpose flour

Instructions

1.Boil chopped beets for 20 minutes or until soft.

5.Knead the dough and roll it out until 1/8 inch thickness.
6.Cut the dough into 3-inch circles using a round cookie cutter.
7.Add a small spoonful of the beet mixture to each circle and fold over to create a pierogi. Press the edges together to seal the pierogi.
8.Boil the pierogies for 4-5 minutes or until they float to the top. Drain and serve with sour cream or your favourite condiments.
