Ingredients

6 medium potatoes
4 slices bacon
1 tablespoon onion , chopped
1 stalk celery , chopped
1 teaspoon salt
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon dry mustard
1 tablespoon sugar
1 cup beer , any lager-type brand ( avoid very heavy beers like Guinness )
1/2 teaspoon Tabasco sauce
2 tablespoons fresh parsley , chopped

Instructions

1.Peel and chop the potatoes into 1 inch pieces.
2.Boil the potatoes in a large pot of water until tender, about 15 minutes, and then drain.
3.While the potatoes cook, fry the bacon in a large skillet until crisp and remove to a paper towel to cool. Crumble when cooled.
4.In the same skillet used to cook the bacon, sauté the onion and celery in bacon grease for 5 minutes until they are slightly softened.
5.Add butter to the skillet and once it has melted, add flour. Sauté for 2 minutes until golden.
6.Turn off heat and add mustard, sugar, beer, Tabasco sauce, and parsley to the skillet and stir.
7.Turn heat back to medium heat and stir frequently until the sauce is thickened.
8.In a large bowl, combine the potatoes, sauce, and crumbled bacon. Mix everything well.
9.Chill the salad before serving for 1-2 hours.
