Ingredients

2 lbs lean ground beef
1 small white onion , chopped
2 cups cooked rice
1 can condensed cheddar cheese soup or ( 10 3/4 ounce ) can nacho cheese soup
1 packet taco seasoning
12 burrito-size flour tortillas
1 salsa
1 can black beans , drained
1 can corn , drained
4 cups shredded cheddar cheese
1 can enchilada sauce
2 tablespoons cilantro

Instructions

1.Preheat the oven to 375°F.
2.In a large skillet, cook the ground beef and onion over medium-high heat until the beef is no longer pink. Drain any excess grease.
3.Add the cooked rice to the skillet, along with the condensed cheddar cheese soup, taco seasoning, and 1/2 cup of water. Stir to combine.
4.Spread a thin layer of salsa on the bottom of a 9x13 inch baking dish.
5.Cut 6 of the burrito-sized tortillas into bite-sized pieces and layer them on top of the salsa.
6.Pour half of the beef and rice mixture over the tortillas.
7.Top with half of the black beans and corn, followed by 2 cups of shredded cheddar cheese.
8.Repeat with another layer of tortillas, beef and rice mixture, black beans and corn, and shredded cheese.
9.Top with the remaining 6 burrito-sized tortillas and pour the enchilada sauce over the top.
10.Sprinkle the remaining shredded cheese over the top of the enchilada sauce, followed by 2 tablespoons of cilantro.
11.Bake for 25-30 minutes, or until the cheese is melted and bubbly.
12.Let stand for 5 minutes before serving.
