1/2 teaspoon garlic powder
1/2 teaspoon fresh coarse ground black pepper
1/2 teaspoon cumin

3 tablespoons vegetable oil , more if needed
1 can beef broth
2 packets lawry 's taco seasoning mix
1 teaspoon Frank 's red hot sauce
1 tablespoon butter
6 -8 large flour tortillas , burrito-sized
refried beans
thinly sliced tomatoes
shredded lettuce
1 package colby-monterey jack cheese , shredded
sour cream
jalapeno , rings ( optional )
salsa ( optional )
black olives ( optional )
3 cups prepared spicy enchilada sauce
1 cup prepared beef gravy

Instructions

1.Preheat oven to 400 degrees F.
2.Rub the roast with seasoning salt, garlic powder, black pepper, cumin, and chili powder.
3.In a large pot, heat vegetable oil over medium-high heat.
4.Add the roast and sear on all sides until browned.
5.Add the beef broth, taco seasoning mix, Frank's red hot sauce, and butter to the pot.
6.Bring to a boil, reduce heat, cover, and simmer for 3 to 4 hours until the roast is tender and falls apart when shredded with a fork.
7.Remove the roast from the pot and shred into small pieces.
8.Assemble the burritos by spreading refried beans onto each tortilla, followed by the shredded beef, tomatoes, lettuce, and cheese.
9.Roll up the burritos tightly and place them seam-side down in a 9x13 inch baking dish.
10.Pour the spicy enchilada sauce and beef gravy over the burritos.
11.Sprinkle with additional shredded cheese.
12.Bake for 20 to 25 minutes until cheese is melted and bubbly.
13.Serve hot with sour cream, jalapeno rings, salsa, and black olives if desired.
