Beef Wellington is a classic British dish that has been enjoyed for centuries, and is said to have been named after the Duke of Wellington. The dish consists of a filet mignon that is wrapped in prosciutto and a mushroom mixture, and then encased in puff pastry. The result is a dish that is both visually stunning and delicious to eat. While it may seem like a complicated dish to prepare, it is well worth the effort for its show-stopping presentation and sensational flavor.

Instructions

1.Preheat oven to 425°F (220°C).
2.Heat the olive oil in a pan over medium heat. Add the onions, red bell peppers, mushrooms, garlic, thyme, and parsley, and cook until the vegetables are soft and the mushrooms have released their liquid. Season with salt and pepper.
3.Remove the vegetables from the pan and set aside. Increase the heat and add the filet mignon to the pan, searing all sides until browned.
4.Allow the meat to cool, and then wrap with prosciutto.
5.Roll out the puff pastry on a floured surface, and then place the filet on the pastry. Spread the mushroom mixture over the prosciutto, and then fold the pastry over the filet, sealing all edges with egg wash. Brush the egg wash over the pastry.
6.Place the wrapped filet on a baking sheet and bake for 35-45 minutes until the pastry is golden brown.
7.Let rest for 10 minutes before slicing and serving.
