Ingredients

2 -3 lbs tenderloin
1 bottle of steak marinade
1/8 teaspoon salt
1/8 teaspoon pepper
1 lb fresh mushrooms
1/2 lb portabella mushroom
1/2 white onion ( sliced )
1/4 cup fine breadcrumbs
1 garlic clove ( minced )
3 tablespoons tarragon vinegar
1/4 cup dry white wine
1 teaspoon tarragon leaf
1 package puff pastry
1 egg
Beef Wellington is a classic British dish that is considered to be a luxurious meal. Originally created for the Duke of Wellington in the 19th century, it is now a popular celebratory dish. Contrary to common belief, the dish is named after the Duke, not Wellington in New Zealand. It's a combination of a beef filet, mushrooms, and seasoned wine wrapped in a puff pastry. The result is a golden, buttery pastry that encases a tender beef tenderloin that's beautifully flavored with mushroom duxelles. Overall, it’s a wonderful dish that is worth the effort and perfect for impressing guests or treating your family on a special occasion.

Instructions

1.Preheat your oven to 425°F.
2.Pour half of the steak marinade over the tenderloin and infuse for 30 minutes before cooking. Keep the other half aside.
3.Heat a large skillet over medium heat and add the sliced onions and minced garlic, then stir until they are softened.
4.Add the mushrooms (portabella and fresh) and the remaining marinade to the skillet, stir for 5 - 8 minutes until the mushrooms have wilted.
5.Add tarragon vinegar and dry white wine to the skillet, season with salt, pepper and tarragon leaves, then let the mixture simmer for 5 minutes until the liquid has almost evaporated.
6.Put a sheet of parchment paper on a work surface and sprinkle breadcrumbs over the top, then place puff pastry over it.
7.Trim the tenderloin and put it on top of the puff pastry.
8.Spoon the mushroom mixture on the beef evenly and then fold the puff pastry over the beef. Secure the edges so that they don't become loose, using a beaten egg.
9.Grease a baking sheet and place the beef in the center of it and brush the top with some egg.
10.Leave the beef in the oven and bake it for 35 - 40 minutes or until the puff pastry turns a golden brown color.
11.Remove the beef from the oven and let it rest for 5 - 10 minutes before slicing and serving.
