Ingredients

2 lbs stewing beef , in 11/2-inch cubes
1 tablespoon cumin seed
5 dried red chilies
1 teaspoon peppercorn
1 teaspoon fenugreek seeds
6 green cardamom pods ( seeds only )
1 teaspoon black mustard seeds
1/2 teaspoon salt
1 teaspoon demerara sugar
5 tablespoons white wine vinegar
2 tablespoons oil
1 medium onion , sliced
1 inch fresh ginger , chopped
2 garlic cloves , chopped
2 teaspoons ground coriander
1/2 teaspoon turmeric
1/2 pint warm water

Instructions

1.Dry roast the cumin seeds, dried red chilies, peppercorn, fenugreek seeds, green cardamom seeds, black mustard seeds in a pan till they release an aroma. Remove from heat and grind to a powder in a grinder.
2.Mix the powdered spices with salt, demerara sugar, and white wine vinegar in a bowl to make a paste.
3.Heat the oil in a large pan and fry the onions, ginger, and garlic until the onions turn golden brown.
4.Add the spice paste to the pan and stir-fry for 2-3 minutes. Then add ground coriander, turmeric, and beef, and cook for 5-7 minutes.
5.Add warm water and let it simmer for 1-2 hours till the beef is fully cooked. Adjust salt and vinegar to taste.
