Ingredients

2 teaspoons oil
750 g lean ground beef
200 g button mushrooms , sliced
2 carrots , cut into 1cm cubes
2 garlic cloves , crushed
1/2 cup plain flour
1 liter vegetable stock
1 cup frozen peas
1 sheet puff pastry
800 g potatoes , peeled and diced

Instructions

1.Preheat oven to 200°C/180°C fan-forced.
2.Heat oil in a large saucepan over medium-high heat. Add beef, mushrooms, carrots and garlic. Cook, stirring occasionally, for 8 to 10 minutes or until beef is browned and vegetables are tender.
3.Add flour. Cook, stirring, for 1 minute. Gradually stir in stock. Bring to the boil. Reduce heat to low. Simmer, stirring occasionally, for 10 to 12 minutes or until mixture thickens. Stir in peas.
4.Meanwhile, place potato in a saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium. Cook for 15 minutes or until tender. Drain. Return to saucepan. Mash. Add 20g butter. Season with salt and pepper. Stir until butter has melted.
5.Cut pastry sheet into 4 squares. Cut each square in half diagonally to make 8 triangles.
6.Divide beef mixture among four 2-cup capacity ovenproof dishes. Top with pastry triangles. Brush with egg. Place dishes on a baking tray. Bake for 25 minutes or until pastry is golden and puffed.
7.Serve beef pot pie with golden mash.
