Ingredients

2 lbs honeycomb beef tripe
1 1/2 lbs fresh beef , tendons
1/4 lb fresh ginger
6 fresh garlic cloves
2 star anise
3 stalks green onions , cut into 2 inch strips
2 tablespoons salt
water
8 ounces dried bean sticks
16 Chinese black mushrooms
1 lb carrot , large sliced
1 lb fried bean cake
1 tablespoon sugar
1/4 cup soy sauce
1/2 cup oyster sauce
salt
white pepper
4 stalks green onions , 1 inch slices
Beef Tripe and Tendons With Dried Bean Curd is a classic Chinese dish that has been around for centuries. It’s a hearty and filling meal that’s easy to make and perfect for colder weather. The honeycomb tripe and beef tendons add a unique texture to the dish that some love and others may not. The dried bean curd acts as a sponge, soaking up the delicious flavors of the broth. This dish is often served at Chinese New Year celebrations and other special occasions.

Instructions

1.Rinse the honeycomb tripe and beef tendons with cold water and set aside.
2.Peel and slice the fresh ginger, then crush the garlic cloves and set the aromatics aside.
3.In a large pot, add the ginger, garlic, star anise, and green onion. Add the beef tripe and tendons, then fill the pot with enough water to fully cover the ingredients. Bring to a boil then reduce to a simmer for 2 hours. Skim off any foam that rises to the top.
4.Soak the dried bean sticks in cold water for about an hour to soften, then coarsely chop them into smaller pieces. Soak the black mushrooms in a separate bowl for at least 30 minutes to rehydrate, then slice them in half.
5.Add the mushroom and bean stick pieces to the pot and continue to simmer for an additional hour. Add the carrot and fried bean cake for the last 30 minutes of cooking.
6.Mix together the sugar, soy sauce, and oyster sauce in a small bowl. Add this mixture to the pot and stir until evenly distributed. Season with salt and white pepper to taste.
7.Serve hot, garnished with the sliced green onions.
