Ingredients

olive oil flavored cooking spray
400 g lean ground beef
2 garlic cloves , crushed
60 ml Old El Paso taco sauce
1 tablespoon mexican taco seasoning
1 tablespoon water
4 green shallots , ends trimmed , thinly sliced diagonally
1 packet bazaar flour tortillas
85 g coarsely grated light mozzarella cheese
2 ripe tomatoes , thinly sliced
75 g baby spinach leaves
1 ripe avocado , halved , stone removed , peeled , coarsely chopped
60 g feta-stuffed olives , green , halved lengthways
lemon wedge , to serve
Beef, Tomato & Mozzarella Quesadillas are a delicious and flavorful take on traditional quesadillas. The combination of seasoned ground beef, juicy tomatoes, creamy avocado, and tangy olives make for a satisfying and well-rounded meal. The melted mozzarella cheese adds a cheesy goodness that satisfies the taste buds. It's easy to make and a crowd-pleaser dish that everyone in the family will love. Instructions

1.Heat a large non-stick frying pan over high heat. Spray with cooking oil. Add beef and garlic. Cook, breaking up lumps with a wooden spoon, for 5-6 minutes or until browned and cooked through.
2.Add taco sauce, seasoning, water and shallot to the beef. Cook, stirring, for 1 minute or until well combined.
3.Place a tortilla on a clean work surface. Sprinkle with 1/4 cup of the cheese, leaving a 2cm-wide border. Top with 1/4 of the beef mixture, 1/4 of the tomato slices, 1/4 of the spinach leaves and a sprinkle of avocado and olives.
4.Fold tortilla over to cover filling. Press edges together to seal. Repeat with remaining ingredients to make 4 quesadillas.
5.Heat a large non-stick frying pan over medium heat. Add 1 quesadilla and cook for 1-2 minutes each side or until tortillas are golden brown and crisp and cheese has melted. Repeat with remaining quesadillas.
6.Cut each quesadilla into wedges. Serve with lemon wedges if desired.
