Ingredients

1 beef tenderloin roast
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
4 teaspoons olive oil

1 small carrot , finely chopped
1 stalk celery , finely chopped ( about 1/4 cup )
1 garlic clove , minced ( about 1 teaspoon )
2 cups dry red wine
2 cups low sodium beef broth
2 tablespoons tomato paste
1 bay leaf
1 sprig fresh thyme
1 tablespoon unsweetened natural cocoa powder
1 teaspoon chopped fresh rosemary leaf

Instructions

1.Preheat the oven to 425°F (220°C).
2.Sprinkle salt and pepper over the beef tenderloin roast.
3.In a large oven-safe skillet, heat 2 teaspoons of olive oil over medium-high heat. Add the beef to the skillet and sear on both sides until brown, about 2-3 minutes per side.
4.Transfer the skillet to the preheated oven and roast the beef until it reaches the desired level of doneness, about 15-20 minutes for medium-rare. Remove the skillet from the oven and transfer the beef to a cutting board to rest.
5.While the beef is roasting, prepare the sauce. In the same skillet used to cook the beef, heat the remaining 2 teaspoons of olive oil over medium heat. Add the shallots, carrot, celery, and garlic, and sauté until the vegetables are soft, about 5-7 minutes.
6.Add the red wine, beef broth, tomato paste, bay leaf, thyme, and cocoa powder to the skillet. Increase the heat to high and bring the mixture to a boil, stirring occasionally. Reduce the heat and let the sauce simmer until it has thickened and reduced by half, about 20-25 minutes.
7.Remove the bay leaf and thyme sprig from the sauce. Stir in the chopped rosemary. Serve the beef tenderloin sliced with the chocolate wine sauce drizzled over the top.
