1 large shallot , sliced
1 1/4 cups beef broth
1 cup ruby port
1/4 cup dried cranberries
four 5 to 6 oz beef tenderloin steak , about 1 inch thick
1/2 teaspoon fresh rosemary
1/2 cup crumbled gorgonzola

Instructions

1.Preheat the oven to 350°F (175°C)
2.In a large skillet, melt 2 tbsp of butter over medium heat. Add garlic and sliced shallots and cook for 1 minute

4.In another skillet, melt the rest of the butter over high heat until it starts to foam. Add the beef steaks and cook for 3–4 minutes on each side until they are browned
5.Using a basting brush or spoon, baste the steaks with the sauce
6.Sprinkle fresh rosemary over the steaks and put the skillet in the preheated oven for 5–8 minutes
7.Remove the skillet from the oven, top the steaks with crumbled gorgonzola, and serve with the remaining sauce on the side
