Ingredients

1/4 cup dried cherries
1 cup port wine or 1 cup other sweet red wine , divided
1/4 cup black cherry juice
1 lb beef tenderloin , trimmed
butter-flavored cooking spray
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
2 tablespoons shallots , minced
1 large garlic clove , minced
1/2 cup low sodium beef broth
1/2 teaspoon dried thyme

Instructions

1.Preheat oven to 375 degrees Fahrenheit.

3.Sprinkle the salt and black pepper over the beef.
4.Heat a large ovenproof skillet over medium-high heat. Coat pan with cooking spray. Add beef; cook 3 minutes on 1 side or until browned. Turn beef over. Bake at 375 degrees Fahrenheit for 15 minutes or until a thermometer registers 145 degrees Fahrenheit (medium-rare). Remove beef from pan; keep warm.
5.Add shallots, garlic, and thyme to pan; sauté 30 seconds. Add remaining 1/2 cup port; bring to a boil, scraping pan to loosen browned bits. Cook until reduced to 1/4 cup (about 2 minutes). Add broth; bring to a boil. Cook until reduced by half (about 5 minutes). Add cherry mixture; cook 1 minute or until heated. Serve sauce with steak.
