Instructions

1.Preheat oven to 400°F.
2.In a slow cooker, cook the roast with onion soup mix (if using), garlic powder, and onion powder until it is tender and easily shreddable. This should take about 6 to 8 hours on low heat.
3.Once the roast is cooked, shred it using two forks. Add cheddar cheese, salsa or diced tomatoes, and onions. Mix well.
4.On a baking sheet, lay out the corn tortillas. Place about 2 tbsp of the beef filling on one side of each tortilla, then roll it up tightly.
5.Arrange the rolled up tortillas seam-side down on the baking sheet and spray or brush the tops with cooking oil.
6.Bake for about 15-20 minutes until the tortillas are crispy and golden brown.
7.Serve with cheese sauce, salsa, sour cream, and guacamole if desired.
