1 1/2 lbs lean braising steak , chuck or blade , cut into chunks
1 onion , sliced
1 clove garlic , crushed

1 grated lemon , juice and rind of
2 tablespoons honey
1 cup prune juice
1 teaspoon harissa or 1 teaspoon sambal oelek
salt & freshly ground black pepper
8 ounces couscous
2 1/2 cups water
2 tablespoons olive oil
1 onion , chopped

1 teaspoon ground coriander
1 teaspoon dried mint
3 ounces pine nuts
1 sprig cilantro ( to garnish , fresh corinader leaves )

Instructions

1.Mix the ginger, cinnamon, allspice, cloves, salt, and black pepper in a bowl and coat the beef chunks with the mixture.
2.Heat the olive oil in a casserole dish and brown the beef on all sides over high heat.
3.Reduce the heat and sauté the sliced onion until soft and translucent, then add garlic and cook for another minute.
4.Add grated lemon, honey, prune juice, and harissa or sambal oelek and stir well.
5.Simmer over low heat for about 1 hour or until the beef is tender.
6.Prepare the couscous according to the package directions.
7.In a pan, heat the olive oil and sauté the chopped onion until tender.
8.Add cinnamon, allspice, turmeric, cumin, coriander, and mint and cook for a minute.
9.Add the pine nuts and sauté until fragrant and golden.
10.Serve the beef tagine on a bed of couscous and top with the spiced pine nuts and cilantro sprigs.
