Ingredients

4 -6 tablespoons butter
2 medium onions , sliced thinly
12 ounces field mushrooms , sliced thinly
2 garlic cloves , minced
1 1/2 lbs good quality beef , sliced thinly across the grain
1/2 cup water
2 beef bouillon cubes
1/2 teaspoon salt ( to taste )
1/4 - 1/2 teaspoon fresh coarse ground black pepper ( to taste )
1 cup sour cream
1 -2 tablespoon Dijon mustard ( I use 2 )
1/4 cup fresh parsley , chopped ( garnish ) ( optional )

Instructions

1.In a large skillet, melt 2 tablespoons of butter over medium-high heat.
2.Add sliced onions and mushrooms, cook until the onions become translucent.
3.Add minced garlic to the skillet and cook for an additional minute, stirring constantly.
4.Remove the onion, mushroom, and garlic mixture from the skillet and set aside.
5.In the same skillet, melt 2 more tablespoons of butter over medium heat.
6.Add thinly sliced beef to the skillet, cooking until browned on both sides.
7.Add water, beef bouillon cubes, salt, and black pepper to the skillet. Allow the mixture to cook for 10-15 minutes, or until the beef is cooked through.
8.Stir in sour cream and Dijon mustard, and mix until well combined.
9.Add the onion, mushroom, and garlic mixture back to the skillet and stir until fully incorporated.
10.Garnish with chopped parsley and serve hot over a bed of cooked egg noodles.
