Ingredients

1 1/2 lbs angus beef
salt and pepper , to taste
2 tablespoons canola oil
1 white onion , diced
4 packages portabella mushrooms , sliced
1 cup Greek yogurt
1 lb egg noodles , cooked
2 tablespoons fresh parsley or 2 tablespoons dill , chopped

Instructions

1.Tenderize the beef medallions using a meat mallet and season with salt and pepper.

3.In the same saucepan, saute onions and mushrooms until tender.
4.Add beef back to the pan and stir in Greek yogurt, parsley or dill and more salt and pepper as desired.
