Instructions

1.In a small bowl, whisk together dry sherry, tamari soy sauce, and cornstarch until well combined.
2.Cut flank steak into thin slices against the grain. Place in a large bowl and add in the marinade mixture. Coat well and let sit for 10 minutes.
3.Heat peanut oil in a wok or large skillet over high heat. Add the marinated steak and cook until browned, about 3 minutes. Transfer to a plate and set aside.
4.Lower heat to medium-high and add another tablespoon of oil to the wok/skillet. Add in sliced onion, asparagus, and red bell pepper. Stir-fry for 2-3 minutes, until onion is translucent.
5.In a small bowl, whisk together balsamic vinegar and sugar. Add it to the wok/skillet along with chicken stock and cornstarch. Cook for another 2-3 minutes until the sauce thickens.
