Ingredients

1 lb beef chuck , boneless cut into 1 inch pieces
2 -3 garlic cloves , minced ( I did n't have any so I used 1 tsp of granulated garlic instead )
1 -2 teaspoon cumin seed ( grind them yourself or use already ground )
1 -2 teaspoon paprika ( I like paprika so I used more along the lines of 2 tsp )
1 teaspoon coriander seed ( grind them yourself or use already ground )
1 teaspoon oregano
1/4 teaspoon cayenne pepper
salt and pepper
1 large onion , chopped
2 medium carrots , peeled and cut into 1 inch pieces
1 can tomato sauce
1 butternut squash , peeled , seeded and cut into 1 inch pieces ( about 1 pound )
1 can green peas
1/2 cup green olives , stuffed with pimentos , cut in half
1/4 cup fresh cilantro , chopped

Instructions

1.Preheat oven to 325°F (160°C).
2.In a large heavy-bottomed pot, heat 2 tablespoons of olive oil over high heat. Add the beef and cook until browned (about 10 minutes).
3.Add the garlic, cumin, paprika, coriander, oregano, cayenne pepper, salt, and pepper to the pot.
4.Stir in the chopped onion, diced carrots, and tomato sauce to the pot. Cover and bring to a boil. Reduce heat to a simmer and cook for 2 hours.
5.Add the squash, green peas, and green olives to the pot. Continue to cook for an additional 30 minutes or until the squash is tender.
6.Remove from heat, stir in the fresh cilantro, and let cool for a few minutes before serving.
