Ingredients

1 lb sirloin tip steak , trimmed and cut into 1 inch cubes
1/2 teaspoon sweet paprika
1 green pepper , chopped
1 cup canned whole tomatoes , chopped
1 onion , chopped
2 tablespoons olive oil
1 bay leaf
3 medium potatoes , peeled & cut in 1 1/2 inch chunks
2 garlic cloves , minced
pimientos ( to garnish ) or roasted red pepper , strips ( to garnish )
cooked green peas ( to garnish )

Instructions

1.In a bowl season the beef with salt, pepper and paprika. Mix until the beef is evenly coated.
2.In a large pot, heat olive oil over medium-high heat and brown the beef in batches until they are evenly browned. Remove the beef from the pot and set aside.
3.In the same pot, add chopped onion and green pepper and saute for 5 minutes, or until onions are lightly golden brown. Add minced garlic and cook for another minute.
4.Add the chopped tomatoes and bay leaf to the pot. Reduce the heat to low, cover and simmer for 25 minutes. Stir occasionally.
5.Add the potatoes and cook for another 30 minutes or until the potatoes are tender. Add the beef and simmer for 5 more minutes to let flavors meld together.
6.Garnish with pimientos, roasted red pepper strips, and green peas.
