2 cans black beans , rinsed and drained

1 bay leaf

Mango Salsa
2 cups chopped fresh mango
1 cup chopped red bell pepper
2/3 cup chopped green onion
1/4 cup chopped cilantro
1 jalapeno pepper , seeded and minced
2 tablespoons fresh lime juice
1 tablespoon olive oil
Taco Filling :
1 pound lean ground beef
1 tablespoon chili powder
1 1/2 teaspoons ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon red pepper flakes
1/4 teaspoon dried oregano
1/4 teaspoon paprika
1 package flour tortillas

Instructions

3.While the beans and rice are cooking, prepare the mango salsa. In a large bowl, combine chopped mango, chopped red bell pepper, chopped green onion, chopped cilantro, minced jalapeno pepper, fresh lime juice, and olive oil. Stir to combine all ingredients and set aside.
4.Now it's time to prepare the beef filling. In a large skillet over medium-high heat, cook lean ground beef and chili powder until beef is browned and cooked through. Add ground cumin, garlic powder, onion powder, red pepper flakes, dried oregano, and paprika. Stir well to combine.
