1 green pepper , chopped
2 cups tomatoes , chopped
2 teaspoons salt
1 teaspoon pepper
2 cups water
Beef Short Ribs are a classic comfort food, and by using a pressure cooker, this meal can be ready in a fraction of the time that it takes to braise them in the oven. The ribs are cut into serving-sized pieces and then browned in a hot pot with oil before being removed to set aside. In the same pot, onions, celery and green pepper are sautéed to create a base for the ribs to cook in. Once the vegetables have softened, the ribs are added back in with some chopped tomatoes and a little salt and pepper. The water is then added, and the pot is sealed and pressure cooked for 35-40 minutes until the ribs are succulent and tender. This dish is perfect for those who want something hearty and warm during the cooler months.

Instructions

1.Heat the oil in a pressure cooker over high heat.
2.Once hot, brown the beef short ribs in batches until all sides are browned. Remove the ribs and set aside.
3.In the same pressure cooker, add onions, celery, and green pepper. Cook until the vegetables are slightly softened.
4.Return the beef ribs to the pressure cooker, along with the tomatoes, salt, pepper, and water.
5.Secure the lid on the pressure cooker. Cook for 35-40 minutes, or until the beef is tender and falling off the bone.
6.Release the pressure and remove the lid.
7.Serve and enjoy!
