3 garlic cloves , crushed in a garlic press
1 small onion , grated
8 -10 peppercorns , crushed
salt , to taste
2 1/2 lbs boneless lean sirloin steaks , cut into 1 1/2 inch cubes
3 small onions , cut into wedges
3 green bell peppers , cored , seeded , and cut into wedges
1/4 cup olive oil
radicchio or red kale leaf
2 tomatoes
2 lemons , cut into wedges
8 scallions , trimmed
1 long zucchini , cut into six 1 inch thick slices

Instructions

1.In a large bowl, mix together pomegranate juice (or sparkling water), crushed garlic, grated onion, crushed peppercorns, and salt.
2.Add the cubed beef into the marinade and let it sit for at least an hour (or overnight) in the refrigerator.
3.Preheat grill to medium-high heat.
4.Thread the beef cubes onto skewers alternating with onion wedges, bell pepper wedges, scallions, and zucchini slices.
5.Brush with olive oil and season with salt.
6.Grill the skewers for about 10 minutes on each side, or until the meat is cooked through and the vegetables are slightly charred.
7.Serve with radicchio or red kale leaves, sliced tomatoes, and lemon wedges.
