Ingredients

3 lbs round steaks

1 lb white pearl onion , peeled ( about 12 )
2 cans condensed beef broth , undiluted
1 1/2 cups dry red wine ( divided )
1/2 cup sherry wine
2 bay leaves , crumbled
1 lb baby carrots , pared and halved lengthwise ( about 8 )

Instructions

1.Preheat oven to 350°F (175°C).
2.On a flat surface, pound steaks until thin and even. Season with salt and pepper.

4.In a skillet over medium heat, melt 2 tablespoons of butter. Sauté onions, parsley, and capers until the onions are translucent.
5.Divide sautéed vegetables evenly among the steaks. Top each piece of steak with 2 halves of bacon.
6.Tightly roll each steak up, and place them into a baking dish.
7.In the same skillet over medium heat, heat oil and melt remaining 2 tablespoons of butter. Add pearl onions and cook until browned.
8.Add beef broth, 1 cup of red wine, sherry, and bay leaves. Bring to a boil.
9.Pour mixture over roulades.
10.Place in oven for 1.5 hours, or until cooked through.
11.Once cooked, remove from oven and discard bay leaves. Garnish with chopped parsley before serving.
