Ingredients

2 lbs potatoes , peeled and shaped into ovals , approximately 1 1/2 inches in diameter
boiling salt water
4 lbs beef tenderloin , filet
1 tablespoon canola oil
12 medium tomatoes
salt water
1/4 cup butter
12 -16 whole mushrooms , approximately 1 1/2 inches in diameter
3 tablespoons butter
1 cup beef broth ( preferably homemade )
1/4 cup dry madeira wine
1/4 cup butter
2 tablespoons finely chopped mushrooms
4 1/2 teaspoons cornstarch or 4 1/2 teaspoons arrowroot
salt & freshly ground black pepper , to taste
parsley sprig , for garnish

Instructions

6.Stuff the mushrooms with 1/4 teaspoon of butter each. Place the mushrooms around the beef tenderloin in the roasting pan.
7.Bake the beef tenderloin, mushrooms, and potatoes in the preheated oven for 25 minutes or until the beef is cooked to your desired doneness.
8.In the meantime, add the beef broth, Madeira wine, 1/4 cup of butter, and finely chopped mushrooms to the skillet. Simmer for approximately 10 minutes.
9.Combine the cornstarch/arrowroot with 1/4 cup of cold water in a small bowl. Once combined, add it to the skillet and cook for another 2-3 minutes, stirring constantly, until the sauce is thickened.
10.Once the beef tenderloin is cooked, let it rest for 5-10 minutes before slicing it into 1/4 inch thick pieces.
11.Serve the beef tenderloin, mushrooms, and potatoes on a plate with the Madeira sauce drizzled on top. Garnish with parsley sprigs.
