Ingredients

5 green bell peppers
5 red bell peppers
2 lbs lean ground beef
4 cups cooked rice , cooled
2 eggs
1 finely minced medium red onion
1 can tomato paste
3 tablespoons maggi seasoning ( without MSG )
3 tablespoons Dijon mustard
1 teaspoon garlic powder
2 teaspoons ground black pepper
1 teaspoon sea salt
6 tablespoons olive oil ( split )
1 jar marinara sauce
Beef & Rice Stuffed Bell Peppers are a classic comfort food that’s easy to make and perfect for feeding a crowd. Instructions

1.Preheat the oven to 375°F.
2.Cut off the tops of the bell peppers and remove the seeds and membranes.
3.In a large mixing bowl, combine the ground beef, cooked rice, eggs, minced onion, tomato paste, maggi seasoning, Dijon mustard, garlic powder, black pepper, salt, and 3 tablespoons of olive oil. Mix well.
4.Stuff the mixture into the bell peppers until they are about ¾ full and place them into a baking dish.
5.Spoon marinara sauce over the top of each pepper and drizzle with the remaining 3 tablespoons of olive oil.
6.Bake for 45-50 minutes until the peppers are cooked through and the beef is browned.
7.Serve hot and enjoy!
