Ingredients

250 ml dry red wine
2 cloves garlic , finely chopped
1/2 teaspoon oregano
2 tablespoons chopped flat leaf parsley
250 g diced beef , eg round steak
2 tablespoons olive oil
1 onion , chopped
1 carrot , chopped
1 stalk celery , chopped
6 slices prosciutto , sliced into 1 cm pieces
1 can crushed tomatoes
1/2 teaspoon sugar
salt
pepper
2 tablespoons olive oil ( second lot of oil )
250 g pumpkin , peeled and cut into 2 cm cubes
10 young sage leaves
2 cups short pasta
2 ounces fresh-grated parmesan cheese , to serve
This classic Italian-inspired dish features slow-cooked beef ragu seasoned with pumpkin and sage, all served over a bed of short pasta. Instructions

1.Preheat oven to 140 degrees C (284 degrees F).
2.Place wine, garlic, oregano, parsley and beef in a large bowl. Stir and let marinate for 10 minutes.
3.Heat oil in a large, heavy-based pan over medium-high heat. Add onion, carrot, celery and prosciutto. Cook for 10 minutes until softened.
4.Add marinated beef, including marinade and cook for 5 minutes or until browned.
5.Add canned tomatoes, sugar, salt and pepper, stir well and bring to a simmer.
6.Cover and place in oven, cook for 2 hours or until beef is very tender.
7.25 minutes before beef is done, grab another pan and heat olive oil over medium-high heat. Add pumpkin and sage and cook for 5 minutes.
8.Cook pasta according to package instructions. Drain and set aside.
9.Mix pumpkin mix with beef ragu.
10.Serve over cooked pasta and sprinkle with parmesan cheese.
